The Wine

Founded in 1958, Produttori del Barbaresco brings together more than 50 growers farming approximately 120 hectares of Nebbiolo. In exceptional years, nine individual crus are bottled as Riservas using the same traditional regime, allowing the character of each site—not a different winemaking recipe—to define the wine.

Pajè’s limestone- and calcium-rich clay contains a notable proportion of sand, producing a Barbaresco known for floral lift, mineral precision and vertical structure. The wine underwent approximately 28 days of skin contact before malolactic fermentation and at least 30 months in large oak casks.

The exceptional 2021 season has amplified the cru’s natural tension. Rose, violet, raspberry and dark cherry are joined by menthol, blood orange, iron, truffle and earthy balsamic notes. The palate is deep and tightly wound, with brooding tannins and vibrant acidity giving the wine significant energy. This is not the most immediately open member of the 2021 Riserva family, but it may prove one of the most rewarding. Ideally begin drinking from 2028.

Cellared Says

Pajè is not the easygoing bottle in the Produttori collection. It is dark, mineral and determined, with the structure of a wine that expects patience. That seriousness is exactly the attraction. Give it cellar time and its floral perfume, ferrous complexity and fine Nebbiolo tannins should knit together beautifully. We managed to snap up the very last six pack of this and it won’t last long.
