The Wine
Crafted by Domaine Jean-Marc & Hugues Pavelot, west of Beaune, working generations in digital terroir. The La Dominode vines are on a moderate east-facing slope (marl, sand, clay), with 45% pre-1930s vines. Organic viticulture, 30% whole cluster, ambient fermentation, and 12 months in 30% new oak underpin its structure.

Supple yet structured, offering blackberry, plum and pressed florals with an undercurrent of mineral lift—sophisticated, intense, and very promising. One of the standouts from a recent tasting. Worth stocking up on the 2022’s as they really are excellent across the board.
