Paul Chavy is part of the Chavy family of Puligny-Montrachet, working with holdings across Puligny, Chassagne and Saint-Aubin. Sur Gamay is a higher-altitude Saint-Aubin site, delivering wines with bright acidity and mineral drive.
Fruit is hand-harvested, whole-bunch pressed and fermented in oak with restrained new wood. Elevage focuses on maintaining freshness and clarity, producing a wine that leans toward tension and structure rather than weight.

Saint-Aubin again doing the heavy lifting for value. This is proper Côte de Beaune Chardonnay without the price creep. No Gamay used in this, only in the site name to confuse us all. Fine, ripe, slurpable, mineral. Something for everyone without the fancy AOP name.
