Timo Mayer remains one of Australia's most distinctive winemakers, known for championing whole-bunch fermentation and producing Pinot Noir with remarkable energy and personality. Dr Mayer Pinot Noir is sourced from selected Yarra Valley vineyards and made in a style that reflects Timo's belief in perfume, texture and drinkability.
Whole bunches play a significant role in fermentation, contributing aromatic lift, spice and structure. Maturation takes place in older French oak to preserve vineyard expression.
The resulting wine sits comfortably between serious Pinot Noir and pure drinking pleasure.

"A great year for this idiosyncratic wine. Complex aromas of wild strawberry, a little morello cherry, warm spice and peony. You barely notice the whole bunches. A generous Dr Mayer that saturates the palate. Ripe, very persistent tannins round out a wine destined to age superbly over the next 10–12 years."
