The Wine

Hat Rock is one of the most distinctive sites in the Lethbridge portfolio. Situated near the You Yangs and planted on ancient volcanic soils, the vineyard consistently produces Pinot Noir with greater structure, darker fruit character and a more mineral expression than many neighbouring Geelong sites.

Lethbridge farms the vineyard with a focus on low yields and balanced canopies, allowing the fruit to achieve full flavour ripeness while maintaining the natural acidity that underpins the wine's longevity. Hand harvesting and careful bunch selection are standard practice.

Fermentation is carried out with indigenous yeasts, often including a portion of whole bunches to build aromatic complexity and structure. The wine is matured in French oak barriques before bottling with minimal intervention.

Hat Rock is generally the more serious and cellar-worthy Pinot in the Lethbridge range, reflecting both the character of the site and the ambition of the winemaking.
