The Wine
Les Pargues is one of the most compelling unclassified sites in Chablis. The lieu-dit sits on the ridge between the Montmains and Vosgros Premier Crus, with an exposure closely aligned to Vaillons and Montmains. It may carry a village appellation, but its position, old vines and stony soils consistently produce wine of Premier Cru stature.
Moreau-Naudet farms 1.8 hectares here, planted in 1947. These old vines produce naturally low yields, generally between just 15 and 25 hectolitres per hectare, giving the wine unusual concentration and textural depth. For the 2024, most of the wine was raised in tank, with approximately 30% matured in neutral oak on its lees.
The domaine’s approach is meticulous but deliberately unobtrusive. The vineyard is farmed organically without certification, the fruit is harvested by hand and fermentation takes place with indigenous yeasts. Extended lees ageing builds texture without masking the mineral character of the site.
Nashi pear, lime peel and white peach sit over a subtly reductive, rocky aroma. The palate is layered and succulent, yet remains charged with crisp acidity. Citrus, orchard fruit and chalk move towards a long, saline and distinctly briny finish. The low-yielding old vines bring depth, but 2024’s cool profile keeps the wine energetic and focused.

Les Pargues is the insider’s purchase at Moreau-Naudet. It has no Premier Cru wording on the label, but its 1947 vines, exceptional position and tiny yields tell a different story in the glass. This has the texture of a serious wine and the mineral cut of classic Chablis. Give it another year or two to settle and it should comfortably outperform its classification.
