The Wine
Vaillons lies on the left bank of the Serein between Montmains and Côte de Léchet. Sheltered by the surrounding hills and exposed to the morning sun, it is generally one of the more floral, supple and immediately expressive Premier Crus of Chablis.
Moreau-Naudet’s 1.78 hectares are divided across four parcels. Vines planted in 1974 grow in Les Epinottes, a cooler section that contributes freshness and perfume, and Roncières, which brings greater flesh. Two additional parcels in Sécher provide the mineral drive and structural backbone. Each component is vinified separately before the final blend is assembled.
The fruit is hand harvested and fermented with indigenous yeasts before extended maturation on the lees in a combination of tank and seasoned oak. The approach builds texture while allowing the different expressions of Vaillons to remain visible.
Granny Smith apple, orange peel and spring flowers open the 2024, followed by pear, citrus oil and fine chalk. The palate begins with a satiny, almost seductive texture before tightening around crisp fruit, bright acidity and a controlled chalky grip. As one of the warmer sites in the Moreau-Naudet range, Vaillons performed particularly well in the cool 2024 season, achieving concentration without losing freshness.
Cellared Says
Vaillons is often the most immediately charming of the Moreau-Naudet Premier Crus, but this is far from a simple or soft expression. The warmer site has given the 2024 more fruit and texture, while Sécher’s influence provides the mineral tension underneath. Beautiful now with air, although a few years in bottle will bring the floral and chalky elements together.
