The Wine
Première Cuvée is the clearest expression of Bruno Paillard’s house style: precise, low-dosage Champagne built as much around reserve wine and extended ageing as primary fruit. The blend draws from 35 crus and comprises approximately 45% Pinot Noir, 33% Chardonnay and 22% Meunier, using only the first pressing of the grapes. A substantial proportion comes from the house’s perpetual reserve, established in 1985, giving the wine depth without sacrificing freshness.
Around 20% of the first fermentation takes place in seasoned oak, adding texture rather than overt flavour. The wine spends approximately three years ageing on lees—well beyond the minimum requirement—followed by at least six months after disgorgement. Dosage remains below 6 grams per litre, placing it firmly within the Extra-Brut style.
The result is finely etched rather than simply lean: citrus, white flowers and red berries meet chalk, gentle toast and the savoury complexity of mature reserve wine. It is the foundation of the Bruno Paillard range, but made with the same patience and detail expected of a prestige Champagne.

Première Cuvée is for drinkers who want Champagne with structure, freshness and genuine reserve-wine complexity rather than sweetness. Bruno Paillard remains less ubiquitous than many major houses, yet the quality and extended ageing comfortably place this among the strongest non-vintage Champagnes at its level. Tasted and highly rated in a blind panel tasting, it punches well above its price.
