The Wine
Serré is one of the foundational vineyards of modern Australian Pinot Noir. First planted in 1984 and extended in 1986, Bannockburn describes it as Australia’s oldest high-density Pinot Noir planting. The MV6 vines are own-rooted and spaced at approximately 1.2 by 1.2 metres—close to 7,000 vines per hectare—on clay over weathered basalt and limestone.
Certified organic since 2021, the naturally low-yielding site is responsible for Bannockburn’s most concentrated and authoritative expression of Pinot Noir. The 2025 was handpicked and fermented in open vats, with a portion of whole clusters layered through the fruit. After 12 days on skins, the wine matured for ten months in French oak hogsheads, approximately 40% new, without lees disturbance.
Dark cherry and plum lead into dried herbs, earth, exotic spice, rust and finely judged cedar. The fruit is concentrated, but the wine’s defining features are its tension and finely grained tannins. It grips the palate without heaviness, carrying savoury detail through a long, mineral finish. This is a muscular Serré, yet one shaped by freshness and control rather than extraction.
Cellared Says
If you want to understand why Bannockburn matters, Serré is the place to start. It has the density and authority of a serious cellar wine, but it never loses the perfume or transparency that makes Pinot Noir compelling. It will reward patience—ideally five years at minimum—but its dark fruit and savoury drive are already difficult to resist. Serre really stood out in this years release.
