Beloved for estate‑owned, A‑Grade Certified Organic and Biodynamic (ACO since 2018) vineyards in high‑altitude Clare Valley, the 2025 Polish Hill Riesling is crafted from hand‑pruned, hand‑harvested grapes that reflect decades of site‑specific expertise. This vintage—released 1 September 2025—offers intensely aromatic, bone‑dry Riesling, powered by pure lime juice vibrancy, crystalline minerality and energetic drive that epitomises the variety, place and indeed Australian Riesling as a whole.

This is a wine for the ages—radiant, finely detailed and brilliantly persistent. Fragrant lime blossom and steely citrus layers ride a backbone of ancient blue‑slate minerality, delivering mid‑palate intensity and a taut, electric finish. Always tight and a little austere when released, this years effort is even more tightly wound, but the depth and underling power is immense. Bright now, but built to evolve beautifully for decades; this 2025 Polish Hill may well define a generation of Australian Riesling.

Quite pale green-yellow in the glass, restrained and reserved on the nose with pristine lemon blossom and steely mineral aromas. The palate opens with again reserved flavours but great intensity, an impression of ripe-fruit sweetness in the centre before a finish of yeasty/pastry and lime/citrus flavours, white pepper and slaty acidity. Long carry, cleansing and appetisingly more-ish aftertaste. Best cellar for a year or two, then drink for a decade and a half.
