The Wine
Planted in 1999 and perched at around 450 m on granitic slopes, Dash Farm produces one of the most refined cool-climate Chardonnays in Victoria. The 2024 was hand-harvested, foot-tread, very gently pressed and fermented in a mix of new Stockinger 300 L oak and seasoned Burgundian pieces, then matured 12 months on lees and 4 months in stainless steel. It opens with crushed rock, lemon and grapefruit rind, white nectarine and subtle spice. The palate is concentrated yet precise, showing chalky minerality, savoury complexity and a long, fine finish.
