The Wine
Virginie Moreau’s domaine is one of Chablis’ finest, producing wines with depth and precision through organic farming, low yields, and extended lees maturation. The 2023 Chablis village is drawn from 20–30-year-old vines in Préhy and Courgis, as well as parcels in Chablis and Chichée. Fruit is hand-harvested, gently pressed over four hours, and fermented with native yeasts—a rarity in Chablis. Raised mostly in tank but with an extraordinary 20 months on lees, the wine shows texture, concentration, and salinity well above its appellation.

This is not your average village Chablis. The extra time on lees builds richness without losing energy or mineral drive. Crystalline citrus, acacia and flint glide into a saline finish, making this both serious and approachable. Drink 2024–2032.
