The Wine

Domaine Gérard Boulay is one of Chavignol’s reference estates, working old vines rooted in classic terres blanches (Kimmeridgian limestone) and caillottes soils that define the village’s most age-worthy Sancerre. Farming is traditional and low-impact, with a strong emphasis on vine balance and harvest timing rather than overt ripeness.

The 2023 vintage delivered excellent natural acidity and aromatic precision. Fermentation is carried out with indigenous yeasts, followed by extended lees ageing in stainless steel to build texture without diluting mineral clarity. The wine shows citrus oil, white peach and fennel, underpinned by a chalky, saline core and a long, disciplined finish.

This is proper Chavignol Sancerre, built around soil and structure rather than fruit gloss. Ideal drinking now, but it will quietly reward 5–8 years in cellar as texture and savoury depth emerge.
